When I have time to create specific replacement lists, I will, but all the substitutes I've learned so far come from other sources. I haven't tried the majority of them yet, so I won't post them officially until then.

Egg Substitutions
A word on egg substitutes. Flax 'eggs', though a great binder, tend to overpower the flavor of whatever it is in. For recipes like biscuits, where there are few ingredients, I avoid flax eggs or what you get is Flax Biscuits. Not my personal favorite. I've gone with applesauce or Ener-G Egg Replacer + water in cases like this.

Flour Substitutions
Gluten-free flours are rarely a 1:1 substitution for gluten flours. More often its a GF flour mix that works 1:1, but it depends on our baking conditions. There are a mind-boggling array of GF flour mixes out there, but it's good to be educated as it's a marathon of baking experience that teaches what combination works best for what type of baking product you wish to produce. As I find more, I will list them. For now, rely on my first post on GF flours.
